This iconic West London Restaurant and Bar independent set over 2 floors with private dining rooms and orangery offers high end seasonal British dining in the rustic style (2 AA Rosette); a relaxed welcoming vibe; entertainment and live music and is also popular for private parties and exclusive hire.
Own monthly changing (short) a la Carte menu showcasing premium produce sourced from quality UK growers and suppliers and Sunday lunch and private dining menus.
Massive kitchen with separate pastry area; high spec / well-maintained equipment incl. Rationale ovens, water-baths, gas-top stove and plancher.
Role Description
Responsible for all aspects of kitchen management; working closely with the General Manager with the support of an established brigade.
Duties include:
Monthly menu planning including costing and spec. Sheets (high end rustic / 2 AA Rosette level), tastings and FOH menu briefings
Running service, team direction and organisation, maintaining high food quality and service standards
Food ordering, stock management, supplier relations and invoices, monthly stock audits, maintaining 70% General Practitioner margin
Kitchen rotas, recruitment, team training and development, personnel files (appraisals, disciplinary and grievance procedures)
Kitchen compliance: maintaining Health and Safety, Fire Safety and First Aid records, ongoing maintenance of kitchen and equipment, EHO and local authority relations
Desired Attributes
This role would suit a confident, creative and experienced Head Chef with a background in quality restaurant brasserie / gastro kitchens.
A Chef with lots of energy and drive coupled with good people management skills.
Good knowledge of current food trends; strong organisation and training skills; proven track record of delivering on General Practitioner and targets without compromise to quality and standards desired.
Salary and Benefits
Start package: £40,000 basic pa and £4,000 annual bonus (paid quarterly / subject to General Practitioner , labour and kitchen hygiene KPIs)
Permanent contract subject to standard 3 months probationary period: regular salary reviews (performance and food sales dependent); excellent opportunities of movement and progression within the group (2022 openings confirmed); 28 days paid annual leave; workplace pension option; team excursions; FAM trips; staff discounts; laundered uniform; meals on duty
approximately. 48 – 50 hrs p wk / 7 shifts over 5 days incl. Weekends
