The Colonel Fawcett pub are looking for a head chef to lead our dynamic team and develop all areas of our successful kitchen.
We serve seasonal British food and any new candidate would need to continue in this cuisine but there is plenty of room for them to express themselves and utilise other cuisines to create the best possible food. The head chef is essentially in charge of all aspects of creating new menus and developing ideas, there's loads of freedom here.
Part of the expanding, independent, Tidalwave Bars group owned by three young and enthusiastic owners, we’re looking for someone to help build the food reputation in our flagship site and share our ethos of high quality food using the best seasonal produce, meat and fish.
The Colonel Fawcett is a fantastic venue in the back streets of Camden that has won numerous awards in all areas inc. The Observer Food Monthly Best Sunday Roast, Evening Standard Top Three Roasts In London, King Of Camden, Kentishtowner Runner Up Best Lunch and more.
The pub prides itself on the highest possible service, it's second to none gin selection and it's incredible array of Beers and Ales (we have sixteen beer lines!).
We have a laid back atmosphere with casual dining which can be more formal on Sundays and early weekdays.
The food take is currently £7-8k per week but there is more scope to improve upon this!
Duties include, but are not limited to, designing new menus, controlling food margins, labour control and health and safety records.
July 17th start date, preferably
Salary £32k + dependent on experience plus bonuses - OTE around £40k
