Sous Chef - Seafood Focused Central London Brasserie - 32k7 shifts per week and £32,000 all in plus pay review upon completion of probation period Our client is seeking a hard working and reliable sous chef for their well-known restaurant with a menu that is rooted in classical French cookery with modern touches and a focus on seafood  As sous chef you will be proven at this level for at least 2 years with current London experience and have an understanding or training in classical cookery with ideally working knowledge in cooking seafood. Volume experience at AA Rosette standards would also be desirable as the kitchen can serve up to 300 covers for lunch and dinner You will help lead a busy kitchen with over 12 chefs and porters and be creative with daily set specials, assist in controlling all food purchasing and costings. This is a busy restaurant with a great reputation and you must still be a “hands on” sous chef cooking with the team and a highly organised and excellent leader Candidates must have work stability to be considered and must be eligible to live and work in the UK unrestricted.
