Sous Chef - Leading 5* Hotel - London GBP38k OTESous chef- GBP35k plus service charge off GBP3kOur client is a large 5 star hotel and is seeking a skilled and proven Sous chef to help run a busy kitchen for their fine dining restaurant and lounge that serves Modern European food with Asian Influences Responsibilities* Daily operation of the restaurant kitchen alongside the Executive, Executive Sous and head chefs* Hygiene and sanitation- To Fully understand SFSMS guidelines* Staffing such as rosters, promotions and transfers* Training/development* Cost control* Fire safety Personal* Fluent Oral and Written English* Diplomas and Certificates in Culinary Art/Professional education* Stable experience in an Independent five star hotel environment* Michelin Star or 3AA Rosette Restaurant experience* experience with volume and managing large teams* Creative and passionate about your craft* Hard working and flexible* Very strong leadership skills* Integrity, Respect and Humility* HACCP and Health and Safety implementation experience* Knowledge of the local London market, food trends and suppliers* Knowledge and leadership with financial aspects, including food cost, labor cost* Effective Training skills* Excellent computer skills Due to the volume of applicants only suitable and stable candidates will be contacted regarding this role.
