Working Hrs: 55 hrs / 5 Days (7 day operation)

With a state of the art open kitchen, 100 covers – highly innovative menus showcase modern and traditional Italian regional cooking supported by award winning wines and cocktails.
With extensive press and media interest (top reviews / Trip Advisor ratings) – this beautifully designed venue attracts a discerning foodie crowd and also offers venue hire and external catering.
Current trading levels: 30 – 50 lunch and 60 to 100 + dinner
Role Description
Responsible for all aspects of kitchen management, working closely with the Owner Manager and supported by brigade of 8 – 10 chefs, responsibilities incl.:
Menu planning including costing and spec. Sheets (modern Italian)
Overseeing service, team direction and organisation, maintaining high food quality and service standards
Food orders, stock management, supplier relations and invoices, monthly stock audits, General Practitioner calculation
Kitchen rotas, recruitment, team training and development, personnel files (appraisals, disciplinary and grievance procedures)
Due diligence: maintaining Health and Safety, Fire Safety and First Aid records, best working practices, kitchen and equipment

Salary and Benefits
£35,000 basic start salary pa / review at 3 to 6 months stage (potential rise to £38,000 pa)
Permanent, full time contract subject to standard 3 months probationary period: regular performance-related salary reviews; work place pension option; courses as required; 28 days paid annual leave; FAM trips and staff discounts; new openings planned (meals on duty and laundered uniform)
Working Hours: av. 50 hrs over 5 days (7 day operation)
Immediate Start available / able to accommodate notice
