Sous Chef – 5* Royal Garden Hotel
We are currently looking for a talented Sous Chef to join our Main Kitchen at the Royal Garden Hotel.
The Royal Garden Hotel is a five red star 394 bedroom hotel located in the heart of Kensington in easy walking distance to Kensington Palace and Hyde Park. Our Main Kitchen consists of a brigade of 35 experienced Chefs for our 2AA Rosettes all day dining Park Terrace Restaurant and Bar, 24-hour Room Service as well as extensive Conference and Events
Responsibilities
As Sous Chef you will be responsible for the management and organisation of the kitchen. You will manage the evening service for the 2 Rosette restaurant, Park Terrace which sits at position in the top 50 on Tripadvisor out of 187000 restaurants in London, as well as the Room Service function. As a Sous Chef you will be heavily involved in menu development together with the Executive Chef, including production of recipes, costing and allergens training. You will be expected to deputise in the absence of the Executive Chef.
Job Requirements
experience
You must be highly experienced in a similar role or as a Junior Sous Chef in a large establishment
Significant experience of producing high quality food within a quality environment (5 star hotel or similar)
Must be highly creative and innovative and be able to work on own initiative.
Proven record of high quality food production
Qualified to a minimum level of NVQ Level 3 or equivalent (or qualification by experience)
Intermediate/Advanced Food Hygiene qualification
Create, develop and implement new seasonal menus and recipes with the vision of exceeding guest expectations
Sound understanding of food costing and working to budgets
Ideal Candidate
Strong written and verbal communication skills
Strong people management skills, including delegating work, giving instruction, coaching and training
Ability to deliver results within agreed timescales and work within tight deadlines
Flexible approach to working hours in order to meet the requirements of the role
Strong focus on hygienic working practices
