XU are looking for an experienced and practical Sous Chef to join the kitchen in their 70-seat restaurant serving innovative and classic Asian dishes in a classic and elegant setting.The menu reflects the quality of locally-sourced ingredients, including seafood from Scotland and beef from Cornwall. To ensure the quality of our dishes everything is produced in-house, including baking, fermenting and curing. The restaurant is situated over two floors: ground floor tea rooms and Mahjong rooms and the first-floor dining room. As Sous Chef, you will support the Senior Sous Chef and Head Chef in managing and inspiring the team to deliver consistent, high quality dishes. You will assist in managing the overall kitchen operation, including prep schedules, stock control, budgeting and maintenance, as well as the day-to-day management of the kitchen team. If you have the following, then we want to hear from you:• Previous experience as a Sous Chef;• A highly creative approach to your work with excellent attention to detail;• Proven ability to support the management of a large kitchen team, including team leadership, motivation, training and development and performance management;• Passion about hospitality and willing to learn new skills;• A working knowledge of health and safety compliance and procedures;• experience in or a passion for Asian cuisine (essential).
