Sous Chef Required in London

We are a Thai concept restaurant, located in Bellenden Village in Peckham, serving tradition, authentic Thai sharing plates full of flavour, heat and Spice, exactly like you get on the streets of Chang Mai, Bangkok and Hua Hin – among others.
The head chef, Jane Alty, has been cooking for 20 years and began her focus on Thai food while working at Michelin Starred restaurant Nahm under legendary Thai chef, David Thompson.
Forget rainbow curries you get at your corner Thai shop, at The Begging Bowl we make all our flavours and base ingredients from scratch; our own coconut cream, curry pastes, sauces and desserts. Over our charcoal grill, wok Burner and ovens we pour a lot of love and experience to produce fresh and exciting food.
THE ROLE
* Manage a small team of chefs, under the development of the Head Chef.
* Ensure quality and standards of all dishes leaving the kitchen
* Assist the Head Chef with admin duties, including but not limited to: ordering, invoicing, stock take cost control, staff rotas and liaising with suppliers.
* The job provides the opportunity to contribute substantially to an established but still growing kitchen, working daily with fresh ingredients and develop skills in an entirely new form of cooking – working with rare fruit and vegetables to establish a uniquely Thai flavour profile.

THE CANDIDATE
We are looking for a Sous Chef who is passionate about Thai food and ingredients and is hungry to learn more about this culture and cuisine. The ideal candidate will have at least 3 year’s experience cooking to a high standard in excellent restaurants. You may not have Thai experience but will be committed to learning this cuisine.
We are looking for someone who will strive to use the freshest ingredients and be excited about using all the incredible produce we are receiving. There will be opportunity to grow within the company as we have plans to open a new site and extend the current restaurant, which includes building a brand new kitchen.
A successful candidate must have:
- The ability to run the kitchen successfully in the head chefs absence
- Be able to contribute creatively to our regular menu changes
- Be able to nurture and help develop junior chefs
- Ensure that high standards are met and are consistent during the prep and execution of dishes
- Support the head chef in her role and communicate effectively with other managers and staff
- This role could be ideal for a very experienced senior chef looking to take the next step in his or her career.
