Salary: £28,000 to £30,000 pa

This beautiful local Pub recently extended and refurbished, situated near Walthamstow features light-airy interiors; ground floor gastro bar; dining room; a small garden and first floor event space with additional bar.
£0.1 million brand new open kitchen centred on the Robata grill (Robata and Hobart new kit throughout including Thermomix; two vat-pacs; Goodman crockery and Welch cutlery).
Rolling seasonal menus offering inspired modern British cooking including a la Carte; Sunday lunch and Bar menu (retro-style light bites and nibbles) sourcing from best local suppliers and producers.
Weekly net sales: £30,000 –£40,000 pa
Kitchen open from 12 noon to 9.30pm Mon to Thursday / 12 noon to 10pm Fri and Saturday / 12 noon to 8pm on Sun
Role Description
Responsible for supporting the Head chef (award-winning modern British background) with all aspects of kitchen management; working closely with the Owners with the support of a small, dedicated brigade:
Duties include:
Supporting the Head chef with daily / weekly menu planning including costing and spec. Sheets (seasonal gastro and refined dishes)
Deputising in the Head chef’s absence: running service, team direction and organisation, maintaining high food quality and service standards
Food ordering, stock management, invoices, stock counting, maintaining 70% General Practitioner margin
Team training and development, FOH briefings
Due diligence: compliance records and procedures, maintenance of kitchen and equipment

Desired Attributes
This role would suit an experienced Junior / Sous chef with a background in modern British cooking – a chef with lots of energy and drive; good knowledge of current food trends; strong organisation and training skills; creative approach re: 1 AA to 2 AA menu planning.
Salary and Benefits
To start: £28,000 to £30,000 pa
Shift pattern: 7 shifts / 5 days (no late finishes)
