Tudor Barn is a unique Gastro Pub/restaurant located in the heart of south east London. It features a busy restaurant and gastro pub, Moat terrace and front gardens. We also have a beautiful events space which can hold up to 200 guests for various events including weddings, parties, funeral and corporate events.
Responsible for all aspects of kitchen management and supporting 2 – 4 chefs on service and Sous chef.
Duties: Monthly menu planning including costing and spec. Sheets, Running service, team direction and organisation, maintaining high food quality and service standards Food ordering, stock management, supplier relations and invoices, monthly stock audits, maintaining 70% General Practitioner margin Kitchen rotas, recruitment, team training and development, personnel files (appraisals, disciplinary and grievance procedures) Due diligence: maintaining Health and Safety, Fire Safety and First Aid records, ongoing maintenance of kitchen and equipment, EHO relations.
Desired Attributes: This role would suit a confident, creative and experienced Head chef with a background in quality gastro / bistro kitchens. Good knowledge of current food trends; strong organisation and training skills; proven track record of delivering on General Practitioner and targets without compromise to quality and standards.
