This beautiful local Pub recently extended and refurbished, situated in a leafy, wealthy suburb of North East London features light and airy interiors, a small garden and first floor event space.
£0.1 million brand new open kitchen centred on the Robata grill (Robata and Hobart new kit throughout including Thermomix; two vat-pacs; Goodman crockery and Welch cutlery)
Your own rolling seasonal menus offering inspired modern British cooking including a la Carte; Sunday lunch and Bar menu (retro-style light bites and nibbles)
Forecasted weekly net sales: up to £30,000 pa (on opening)
Kitchen open from 12 noon to 9.30pm Mon to Thursday / 12 noon to 10pm Fri and Saturday / 12 noon to 8pm on Sun
Set to launch in mid-May – soft opening followed by grand launch
Role Description
Responsible for all aspects of kitchen management; working closely with the General Manager and Owners with the support of a small, dedicated brigade incl. Sous chef:
Duties include:
Daily / weekly menu planning including costing and spec. Sheets (seasonal gastro and refined dishes)
Running service, team direction and organisation, maintaining high food quality and service standards
Food ordering, stock management, supplier relations and invoices, monthly stock audits, maintaining 70% General Practitioner margin
Kitchen rotas, recruitment, team training and development, personnel files (appraisals, disciplinary and grievance procedures)
Due diligence: maintaining Health and Safety, Fire Safety and First Aid records, ongoing maintenance of kitchen and equipment
Desired Attributes
This role would suit an experienced Head Chef with a background in modern British cooking – a chef with lots of energy and drive; good people management skills who can produce inspired Restaurant / Gastro menus at 1 to 2 AA Rosette level.
Good knowledge of current food trends; strong organisation and training skills; proven track record of delivering on General Practitioner and targets without compromise to quality and standards desired.
Salary and Benefits
£30,000 to £33,000 basic pa and est. £3,000 service charge and £5,000 annual bonus (paid quarterly / subject to maintaining 70% General Practitioner )
Total package: £38,000 to £41,000 pa
Permanent contract subject to standard 3 months probationary period: regular salary reviews (food sales dependent); courses as required; 28 days paid annual leave; 5% workplace pension option; new openings / movement; progression (Area Executive chef); group discounts; laundered uniform; meals on duty
approximately. 50 – 55 hrs p wk / 5 days incl. Weekends
