Salary: £34k and £3k + tronc and £5k bonus pa
Working Hrs: 5 Days / 7 Shifts

Part of an established group, this beautiful neighbourhood Gastro and Courtyard situated in leafy East London is a firm favourite with local diners offering seasonal modern British Gastro Bistro dining.
Sourcing from small artisan growers and suppliers and with your own menus changing monthly to reflect best in season produce – this pub takes approximately. £8,000 – £12,000 weekly net food sales and is also popular for small functions and parties.
Menus: seasonal gastro; Sunday lunch; small plates and canapes
Kitchen closing: from 9.00pm to 10.00pm.
Role Description
Responsible for all aspects of kitchen management, working closely with the General Manager and support of a Sous Chef and small kitchen brigade, duties include:
Monthly menu planning incl. Costing and specification sheets
Running service, team direction and organisation, maintaining high food quality and service standards
Food ordering, stock management, supplier relations and invoices, weekly stock audits, maintaining 70% General Practitioner target
Hiring, team training and development, rotas, personnel files
Due diligence: maintaining Food Safety and HACCP records, maintenance of kitchen and equipment
Desired Attributes
This role would suit an up and coming Head Chef with a good grasp of seasonal ingredients who loves to be creative, developing menus with quality and volume in mind.
A chef who has lots of energy and drive, good organisation and people skills with awareness of current food trends and good track record delivering on KPIs.
Salary and Benefits
£34,000 basic salary pa and £3,000 + tronc pa and £5,000 annual bonus (paid quarterly)
Total: £42,000 pa (package rising with food sales)
Live In Accommodation available
Permanent contract subject to standard 3 months probationary period: regular salary reviews (food sales dependent); courses as required; 28 days paid annual leave; 5% workplace pension option; new openings / movement; progression (Area Executive chef); group discounts; FAM Trips and team excursions; laundered uniform; meals on duty
approximately. 50 – 55 hrs p wk / 7 shifts over 5 days incl. Weekends
