Our main site, Pachamama is a successful, innovative and well established Peruvian inspired restaurant, based in Marylebone, Central London. We have recently opened Chicama, a modern Peruvian-British seafood restaurant in Chelsea and are looking for sensational people to join our teams.
We are currently recruiting for the role of Head Chef for our Chicama site. Our guest experience is all about delivering amazing service which comes from the heart, our team are very close and work hard to deliver outstanding service together.
Objective of Role (overview):
The role of the Head Chef is to be responsible for the entire kitchen in accordance with company standards and to ensure that all supporting staff are developed to manage each area in their absence;
• Quality of Product, Presentation and control
• Development
• Staff Recruitment, Training and Retention
• Legal compliance
• Financial
The Head Chef effectively manages, develops and delegates to the Sous Chef and all kitchen staff – who in turn have specific responsibilities for:
• Training
• Administration and Finance Management
• Health and Safety Management
REPORTS TO:
Exec Chef
OVERVIEW OF RESPONSIBILITIES AND DUTIES
PRODUCT QUALITY and CONTROL:
• Leading by example in all areas of product knowledge, consistency, timings, presentation and quality
• Demonstrating full commitment to food and menu knowledge and 100% focus on achieving all Pachamama requirements
• To ensure that the kitchen opens, operates and closes to the required standards
• Commitment to Pachamama standards of presentation for staff and site
• Ensuring stock rotation and par level management and to maintain a fresh approach to product offering
• Receiving of goods
• Effective pass management, prep controls line checks and tastings
• To ensure the adherence to all daily/weekly cleaning schedules
CREATIVE DEVELOPMENT:
• Attendance and participation in staff brief to ensure 100% focus on product and service quality
• Ongoing research regarding new trends in the market
