HEAD CHEF - New Opening Restaurant and Bar - LONDON £47K + BONUSBasic salary of 40,000 plus 7k tronc and KPI bonus You must be available to start preopening by Mid September A really exciting concept is coming to the City that will be the second opening of this well backed Company The Concept:
Food led with open service kitchen- Carefully designed work flow with top equipment.
Serving breakfast, lunch and dinner with 100 covers over 7 days brunch at the weekends.
Downstairs bakery, butchery and prep kitchen supplying the kitchen with charcuterie and cured meats and to existing and future openings within the company.
Everything made on site
Craft suppliers using only seasonal ingredients to produce a modern menu with detail and creativity.
The Person:
Ambitious and stable Head chef who can work with the very talented Executive chef and engage in dialogue about the concept and dishes whilst ever evolving the menu.
Takes pride in serving the best breakfast, Sunday roast as well as the more detailed a la Carte menu.
An understanding that this is a new opening leading into Christmas and therefore they will be working longer hours until it Settles down.
A background of being trained in highly respected London kitchens with an understanding of seasonality, butchery and preserving methods.
Creative with no ego managing a team of 10 chefs plus porters.
Must have experience of costings, menu development and new openings.
Knows the London dining and street food scene.
