Recently refurbished, this grand Victorian Gastro Pub Restaurant with Garden and Rooms situated in North West London has built a good local reputation for offering exciting seasonal, robust British dining.
Sourcing from artisan suppliers and growers, menus change monthly to reflect best produce in season, with a la Carte, tapas / small plates on the bar, Sunday Roast and garden barbecue menus during the summer months.
2 floor / 7 day operation; approximately. £10,000 – £12,000 weekly net food sales (dependent on time of year), last orders from 9.30pm to 10.00pm.
Role Description
Responsible for all aspects of kitchen management, working closely with the General Manager and support of a Sous Chef and kitchen brigade of 6 (4 chefs and 2 KPs)
Duties include:
Monthly menu and daily specials planning incl. Costing and specification sheets
Running service, team direction and organisation, maintaining high food quality and service standards
Food ordering, stock management, supplier relations and invoices, weekly stock audits, maintaining 70% General Practitioner target
Hiring, team training and development, rosters, personnel files
Due diligence: maintaining Food Safety and HACCP records, maintenance of kitchen and equipment
Desired Attributes
This role would suit an experienced Head Chef with a background in quality local gastro and bistro kitchens.
A chef who loves to be creative and has a good grasp of seasonal ingredients and modern British cooking trends.
Desired skills: great drive and energy; strong leadership and people management skills; hands on management style; passionate about cooking and passing on knowledge to the team.
Salary and Benefits
£34,000 to £35,000 basic salary pa and tronc (approximately. £50 per week) – paid on 4-weekly cycle
£5,000 annual bonus (paid quarterly)
Package of £41,600 to £42,600 pa available
Permanent contract subject to standard 3 months probationary period; regular performance related salary reviews; courses as required; movement and new openings; 5% workplace pension; 28 days paid annual leave; staff discounts; meals on duty; laundered uniform; FAM trips and team excursions
