Operation: 2 Floor Gastro Independent / New Opening
Location: City of London
Salary: £34k / £35k basic and £4k bonus
Working Hrs: 5 Days / 7 Shifts (48 – 50 Hrs)

Award-winning independent group operating a collection of flagship restaurant and neighbourhood Gastro properties across London is set to launch a new 2-floor gastro property in the City.
Menu: seasonal classic British with a modern twist – all fresh / monthly menu change supported by bar and daily specials.
Kitchen: all new equipment including robot Coupe; vac-pacs; vitamix; pans, etc with additional prep kitchen on next floor.
7 days operation: offering lunch / dinner mid-week, Saturday brunch and classic Roast on Sundays
Forcasted food sales: £8,000 to £10,000 net per week.
Role Description
Responsible for all aspects of kitchen management; working closely with the General Manager with the support of the brigade (Sous chef, 2 CDPs, KPs):
Duties include:
Menu planning (recipe specifications , costings, tastings)
Overseeing the smooth running of the kitchen; ensuring optimum team performance to maintain
high food quality and service standards
Stock management: ordering, supplier relations and invoices, wastage control, monthly stock audits, maintaining 70% General Practitioner target
Kitchen paperwork: rostering, invoices, sales / cost reporting, payroll / time sheets, daily compliance files
Responsible for hiring, team training and development, personnel files

Desired Attributes
This role would suit a confident, creative and experienced Head Chef with a background in quality brasserie / gastro kitchens.
A Chef with lots of energy and drive coupled with good people management skills.
Good knowledge of current food trends; strong organisation and training skills; proven track record of delivering on General Practitioner and targets without compromise to quality and standards desired.
Salary and Benefits
Start package: £34,000 to £35,000 basic pa and £4,000 annual bonus (paid quarterly / subject to General Practitioner , labour and kitchen hygiene KPIs)
Permanent contract subject to standard 3 months probationary period: regular salary reviews (performance and food sales dependent); excellent opportunities of movement and progression within the group (2022 openings confirmed); 28 days paid annual leave; workplace pension option; team excursions; FAM trips; staff discounts; laundered uniform; meals on duty
approximately. 48 – 50 hrs p wk / 7 shifts over 5 days incl. Weekends
