Offering a daily / rolling menu showcasing an inspired range of authentic regional dishes at 2 AA Rosette level (charcuterie, small plates, a la Carte and plats du jour) – ingredients are sourced from premium artisan UK and French growers and suppliers.
Award-winning wine list plus relaxed, informed service style.
Covers per service: 40 to 50 + mid-week, 50 – 80 + weekends (7 day operation / closed Sunday PM)
Role Description
Working closely with Head chef and supported by an established FOH team, responsibilities incl.:
All managerial aspects of the operation; ensuring the smooth running of the day-to-day business….ensuring highest standards and optimal team performance to ensure unrivalled levels of customer service
Wine list development
Team hiring and development; personnel and Human Resources ; rostering and payroll
Stock management incl. Purchasing, supplier accounts and relations, invoices, stock audits, etc
Back Office: admin; forecasting; sales and cost reporting (sales / General Practitioner and labour costs); budgets, P and L, banking; meeting targets and deadlines accordingly
Full compliance and maintenance of building; local authority relations; EHO liaison
Local marketing strategies and promotion of business

Salary and Benefits
Starting on £34,000 – £35,000 basic salary pa and bonus
Permanent contract subject to standard 3 months probationary period: external courses as required; ongoing in-house development; progression and movement within this London based independent restaurant group with new London projects confirmed; regular salary reviews; workplace pension option; standard 28 days paid annual leave; group staff discounts; FAM trips and team excursions; meals on duty
7 shifts over 5 days (7 days operation / closed Sun PM)
Sundays and Public / Bank Holidays off – Operation closed over Christmas and NY period
Immediate start / able to accommodate notice
