Working Hrs: 50 hrs / 7 shifts over 5 days

With stunning interiors designed to deliver the ‘wow’ factor – menus are in the modern British style with Pan Asian influences – playfully innovative small plates and a la Carte plus private dining and events. Additional destination Cocktail Bar and open breakfast kitchen.
Team: General Manager, Bar Manager, 3 Restaurant Managers and Breakfast Manager and 30 + FOH team
7 day operation: 500 – 600 + covers for lunch and dinner
Role Description
Responsible for the smooth daily operation of the Cocktail Bar and Café Lounge Bar:
In charge of Bar team – tastings, briefings, delegation, supervision and organisation
Cocktail list development – innovative / modern design (incl. Specifications , costings)
Support to Heads of Department (Floor, Sales and Marketing, Events, Kitchen teams)
Stock management: supplier relations; price negotiation; ordering; stock audits and General Practitioner targets; cellar management and wastage control
Team hiring, training and development, rostering
Due diligence / compliance files and procedures, maintenance of bar and equipment

This would suit an ambitious, self-motivated Bar Manager with a great personality / people skills and strong hospitality and guest experience with an extensive background and knowledge of cocktails and mixology.
London experience preferred / min. 2 years stocks experience essential.
Salary and Benefits
Start salary: £35,000 basic pa and KPI-related bonus (review after 3 months)
Permanent contract subject to standard 3 months probationary period: regular salary reviews; courses as required; standard 28 days paid annual leave; work place pension; FAM Trips; staff discounts; meals on duty
