These will include; HACCAP procedures, financials including dish costing, menu writing, Human Resources knowledge and a passion for food and the London dining sceneA steady, strong and professional personality is vital, along with great communication skills and a can-do attitude Applicants who change jobs roles regularly will not be considered!The sous chef will also be required to manage and motivate a brigade and cover for the Head Chef in his absence Negotiable salary plus bonus depends on experience and stability.
