As Sous Chef you should be able to lead in the absence of the head chef and take charge of the kitchen, you should also have a knowledge of the stocks, rotas, wastage, ordering.
Working with fresh seasonal produce the Sous Chef will work side by side with the Head Chef to mentor, create and develop the team.You should be presentable, clean and tidy.
