Each restaurant has its own identity and menu that comes from the group Executive chef Although the core menu is already written you will have creativity over daily specials working closely with the head chef and team so they are seeking a sous chef that's comfortable with following the brand menu but creative with specials The restaurant is busy and therefore you must have previous high volume all day dining experience managing teams of up to 15 chefs with work stability at sous chef level Some responsibility for all ordering, costing the specials and H and S compliance plus ongoing staff training.
