Harbour and Jones is an independent and enterprising food service company. Never desiring to be the biggest in our field, we simply aim to be the best. H +J is one of our brands it’s a choice for stylish cafes and staff restaurants; meetings and events in iconic venues and contemporary dining rooms in visitor attractions.
This role is based at a busy, high profile and vibrant staff operation in a world famous department store in West End. You will be working as part of a team of 10-12. This site is open Monday to Sunday daytime only for breakfast and lunch. You will be required to work 5 days out of 7, including weekends.
Your main duties and responsibilities will include:
- To produce food which is seasonal, of known provenance, locally sourced in a timely fashion to ensure smooth service to the customer
- To deputise in the Head Chef’s absence
- To assist the Head Chef in developing and planning menus that are in line with client and customer expectations
- To prepare and oversee all preparation of food to the highest standard
- To undertake stock ordering and stocktaking as necessary
- To ensure that all appropriate ingredients are available for the menus being prepared and where necessary identify shortages and instigate action to source ingredients
- To control costs through efficient purchasing and use of existing stock
- To work with the Head Chef to deliver all budgetary targets on site through a thorough understanding of General Practitioner , General Practitioner %, selling price, cost price, margin, mark up and calculation of menu costs through recipes
- To provide any necessary on-job training whereby increasing the team’s understanding and knowledge of produce
- To assist as directed by Head Chef in any appraisals, and the management of poor performance and attendance
The ideal candidate has:
- Has NVQ level 1 and 2 qualifications or similar City and Guild examinations
- Has a broad knowledge of H and S and Food Hygiene
- Has previous experience in a similar role
- Is enthusiastic and passionate about food
- Has great oral and written communication skills
- Has financial awareness
- Is a team player
- Is committed and enthusiastic to the job
- Has organisation and planning skills
- Is customer focused
- Is able to work well under pressure
- Has excellent product knowledge, including an understanding of seasonality, quality and cost
- Has numeracy skills
- Is computer literate
