We are seeking a skilled Head Chef experienced at running high volume operations and specialised in Nikkei/Japanese cuisine, which has knowledge of both Sushi and grill techniques for our new opening in Notting Hill.
We will allow him to express himself freely with his creativity whilst managing a full kitchen staff of 10 +.
This is a hands on Head chef role and as such you would be expected to be present in the kitchen at all times ensuring the high standards are adhered to at all times.
We are looking for a proven Head Chef with excellent training, development skills and organisation skills with the ability to work under pressure and overcome all challenges expected from a high profile restaurant. It’s essential that you have proven financial acumen with an understanding of all kitchen budgets.
Background
We are opening a new urban flame and raw bar with a Gin Cocktail bar split across 3 floors. The restaurant will be fast paced with an average of 200 pax/day.
Duties:
- Prepare, present and inspect all menu items in a timely manner and ensuring that the level of quality, portion control, and plate presentation are adhered to in a consistent fashion
- Train/Teach/Share skills with sushi, grill and prep staff
- Multi-task well in fast-paced, restaurant with modern Nikkei/Japanese cuisine
- Ensure food safety procedures are executed according to policy and health/sanitation regulations
- Maintain fast, accurate service, positive guest relations, and ensure products are consistent with quality standards.
Required Skills
- Must have at least 5 years experience as a Sushi Chef with experience in all sushi preparations including sushi, sashimi and Maki.
- Must have superior knife skills, creating exciting visual presentations for their food that are neat and clean with an eye for artistic balance.
- Knowledge of all sushi related products and menu development.
- Ability to work a full-time schedule on your feet.
- The desire to interact with guests in a professional and courteous manner in our open kitchen.
