Head Chef
Citation Taverne and Restaurant is housed within the former Landmark Sheriff Court building in the heart of Glasgow’s busy Merchant City. Our Restaurant offers a variety of classic and contemporary dishes and the ground floor Taverne boasts an impressive array of Cocktails, Draught and Bottled Beers and Ciders, Spirits, Liqueurs, Fine Wines and Champagnes.
We currently have an opportunity for an experienced Head Chef who can bring leadership, passion, and innovation to the role of this successful restaurant.
This extensive 7-day operation consists of; a 100 cover A la Carte Restaurant, a large Bar Area- offering casual daytime lunches and seasonal “Al Fresco” dining on our summer terraces.
As Head Chef, you will recruit, train and develop the team in creating fresh, quality food in an informal yet up market dining environment. We’re looking for an individual who can put their own mark on the dining experience, taking the Restaurant forward in the modern culinary world, whilst understanding the operational aspects of the kitchen and market conditions.
The Head chef will have a quality restaurant background providing an all-day dining experience, be professional, hands on, creative, highly organised and lead from the front.
You will also be enthusiastic, driven, hardworking and expected to ensure effective and timely execution of all dishes, ensuring consistency and quality on every occasion as well as:

At least 2 years’ experience as a Head Chef in a similar position.
General Practitioner and Stock Management.
High Standards of Cleanliness and Hygiene.
Comply with all Health and Safety Regulations.
Great Communication
Ability to Manage and Lead a Team
Train and Develop Staff
Passion for producing great fresh food dishes consistently in high volume.

Competitive Salary Package
Based on a 48-hour week
5 Days from 7 on a shift basis
