Tonkotsu prides itself on serving some of the best Japanese food in London and it is on the lookout for a General Manager at our popular Tonkotsu East; located in Haggerston East London.

General Manager Responsibilities
Leading a motivated team to ensure a smooth-running, profitable restaurant Hiring, training and supervising of full time and part time employees Drive sales within the restaurant Ensure all financial procedures are adhered to, which include (but not limited to); Labour – organising staff schedules to be in line with agreed budget Stock control – accurate counting and entering of figures Understand the local area to recognise marketing opportunities and other competitors Ensure the Health and Safety regulations are strictly observed, recorded and archived Monitor quality and availability of products and service provided Hitting agreed Key Performance Indicators (KPI’s), which include; Mystery Shopper results Health, Safety and Hygiene results Operational Checks Periodical P and L;’s results Appraisal feedback Ensure all security procedures are adhered to Completion of all necessary documentation to company standard Behaviours we expect:
Be a decisive, confident leader being sometimes ready to take unpopular decisions and stand by them be assertive without being aggressive be a good communicator and be able to express yourself clearly in spoken and written English be very organised, controlling your own workload and that of the team have hawk-like attention to detail be able to prioritise and delegate in a busy and high-pressure environment be perceptive – sensitive to the needs of customers and colleagues and deal with both with compassion be approachable and warm, with a friendly demeanour be an expert in our menus, enthusing about our products to customers and in training your team to recommend and upsell be able to build a team and be a master of motivation, working in harmony with the team to create a perfect restaurant environment and team work mentor the team, be able to advise and assist them take responsibility for your actions In return, you’ll receive:
