The Mustard to our ketchup: you should have prior experience in a small but fast-paced, quality restaurant environment, a desire to pursue a long-term career in hospitality, excellent communication skills, and a keen interest and knowledge of wine and Champagne (a WSET qualification or similar would be an added bonus).
