Vietnamese Kitchen are bar Manager

Vietnamese Kitchen is a restaurant group with traditional Vietnamese restaurants and street food delis from central to east London. Offering full course meals, experimental cocktails and traditional deli sandwiches, Vietnamese Kitchen will transport you to the hustle and bustle of Vietnam with our venues serving up the light and aromatic flavours of Vietnamese cuisine
Vietnamese Kitchen are now on the hunt for an experience bar man to head up one of our restaurant sites.
Main responsibilities will include -
- Establishing a regular customer base
- Maintaining high standards of personal appearance and ensuring the bar staff do so
- Communicate all customer needs to staff
- Regular staff meetings
- Implement corrective action when necessary between the team
- Meet target cost of sales determined by company budgets
- Opening and closing of the bar area ensuring cleaning duties are carried out
- Maintenance of bar equipment
- Maintain a positive working environment
- Assigning roles and duties to bar staff
- Recruiting, training and motivating staff
- Keeping up to date with licensing legislation and taking legal responsibility for the premises
- Management of stock - FIFO (Stock rotation – FIRST IN FIRST OUT)
- Enforcing health and safety rules
- Dealing with customers and providing a prompt, Slick, attentive service
- Set and monitor quality and service standards while regularly liaising with guests
- Bar staff rotas
- Oversee prep and presentation of beverages
- Monitor cleanliness and hygiene
- Monitor and order supplies and manage stock
- Liaise with suppliers and sales reps
- Check deliveries
- Set, monitor and control budget
- Generate and present financial reports – recording of beverage sales
- Handle in person complaints
 - Stock Security – ensure access to stock room etc. Only applies to relevant staff.  
- Create recipes and costs – train staff accordingly
The ideal candidate will -
- Min of 2 year’s experience as a bar supervisor/head bartender/manager in a fast paced environment
- Ability to implement work schedules
- Have full knowledge of emergency procedures
- Have a passion for the industry
- experience in the management of a bar or beverage service operation
- Complete knowledge of alcoholic and non-alcoholic beverages
- Knowledge of stock taking / General Practitioner levels
- Be able to train and motivate a team
- Creative and passionate
- Great sales skills
- Clear communication skills.
- Hard working
- Ability to multi task and work well under pressure
