* Working in cohesion with the General Manager to ensure overall performance of all areas of the front of house
* Managing daily shift from opening to closing of business
* Excellent customer service ( American style/ smiling, quick, knowledgeable, naturally relaxed but flying high when the TO DO list keeps growing )
* Working with management to influence and monitor the dinner service, performance, standards and training
* Understanding all BOH functions
* Implementation of productive team rotas
