Position: Specialist Japanese / Sushi Chef.
Employer: Japanese Sushi Restaurant
Location: London
Salary: ranging from £28,000 to £30,000
Bonus: Outstanding performance based monthly bonus opportunity.
Working days / hours: up to 48 hours within a 5 day week.
Benefits: 28 days paid holiday (pro rata), employer’s pension contribution, Chef’s uniform and meals on duty.

You will have the required level of skills and knowledge for preparing, cooking and finishing complex made to order authentic Japanese Sushi. You will be adept at traditional cooking methods that are the theme of our restaurant.
You will also be involved in planning of seasonal dishes and specials in addition to our established menus. You will work in conjunction with our senior Chef and our Culinary Designer. You will also be training supervising junior chefs, Further duties will include monitoring and management of food waste, routine stock ordering, rotation quality checks, implementing and ensuring compliance of hygiene and health and safety guidelines. You will also regulate and monitor food temperatures, and assist in cost analysis and review, and preparing reports and schedules, performing key duties as assigned.
To qualify for selection you must have the following minimum requirements: -

Eligibility to live and work in UK
High level culinary creativity and competency in preparation of authentic Japanese Sushi items.
Adept at handling, care and maintenance of specialist ethnic food preparation equipment.
Extensive previous experience at required skill level to be verified by references.
