About Grays and Feather
Award winning independent wine merchant opening a flagship sparkling wine bar exploring the history and variety of the style, from the ancestral styles first made 450 years ago, to modern, experimental and trending wines. The list will comprise 70 rotating sparkling wines from around the world, alongside sparkling cocktails, still wines, Beers and other wonders. The food menu will be concise and inspired by international flavours, and you’ll be working alongside an energetic and creative team of storytelling floor staff and part of a well-regarded brand.
This is a creative role, producing inventive flavour combinations - taking fresh, sustainable ingredients, making them sing, exploring exotic spices and sauces and in the process making new combinations of traditional and exotic flavours. It is an experimental role that is focused on the chef craft, the art of matching unusual flavours, both to each other and to wine. Be it from the plant world, animal kingdom or the oceans. The focus is on fun and the sensory nature of food - how to give the diner a surprising experience.
Seeking a Sous Chef to contribute or lead menu development and prepare predominantly uncooked sharing plates to compliment our wines at the venue in Covent Garden’s theatreland, one of London's most renowned F and B  destinations.

About the job

Full training on our product range is offered, but a passion and keen interest in modern international cuisine, flavour combination, seafood and cold food is necessary.
