Senior Sous Chef
This 66 bedroom Relais Chateau AA 5 Red Star hotel located in an area of outstanding natural beauty on the south west coast of Ireland has a vacancy for a talented Senior Sous Chef to strengthen the team. The Hotel boasts deluxe en-suite bedrooms with their warm, relaxing ambience, to grand, interconnecting Suites that epitomise luxury and comfort, self-catering cottages and a Spa and caters for weddings and private functions throughout the year. The 2AA Rosette restaurant is the best destination fine dining venue in the area with the accent on seasonal local produce and is pushing for 3rd Rosette. Everything is made in house from scratch by a team of 12 chefs.
Standards throughout are high.
The kitchen serves an A La Carte breakfast, light lunches, afternoon tea and dinner.
As Senior Sous Chef your key responsibilities will be:
• Support the Head Chef to ensure that every aspect of the service runs smoothly
• Run the kitchen in the Head Chef’s absence
• Kitchen management duties, stock control, wastage, hygiene etc
• compliance with all statutory legislation and regulations.
• Maintain exceptional standards of quality assurance, food prep and cooking
The Candidate
The ideal candidate will be a solid professional all round chef with strong kitchen skills, an easy-going nature and a “can do” attitude to work. You will have several years’ experience at senior level in a similar busy fresh food environment.
experience to 2 Rosette or Michelin standard is essential. Previous experience in a Relais Chateau property would be an advantage.
Required: Qualifications / Skills / experience
• Passion and enthusiasm for food and quality,
• Fully conversant with Hygiene and Health and Safety best practice
• Long term service
• Thrives on the pressure of a busy service
• Excellent kitchen manager
• Confident, professional
• Minimum of 3 years of experience in a similar role with appropriate professional qualifications.
We are looking for an enthusiastic and reliable Senior Sous Chef with several years’ experience in fine dining with the skill set to move around the kitchen as required and lead the team on a regular basis.

Salary: 38,000€ to 40,000€, 45-hour week, Live out.
