Omoide is a new Japanese concept from renowned chef Angelo Sato - previously head chef at 2* Restaurant Story and sous chef at 3* Eleven Madison Park (also voted best restaurant in the world 2022)
Our mission is to bring beautiful, freshly made ‘chirashi’ sushi bowls and dashi to the lucky people of London, and we are opening our first grab-and-go shop on beautiful Bermondsey Street very soon – and we are looking for positive, outgoing and professional people to join or small but brilliant team (you can read more about us further on!)
We are recruiting for experienced production chefs.
- experience in fresh food preparation, ideally with Japanese and/or sushi background (from CDP level and up required)
- Role will include preparation of all MEP for our little shop - sushi rice, fresh fish, dashi, a wide variety of interesting and delicious garnishes.
- Full time hours but only during the day in our lovely, light-filled production kitchen near Bermondsey Street SE1 - no evenings and no Sundays!
- Chance to learn from owner / chef Angelo Sato who has a very strong Michelin star background.
- You will be responsible for ensuring the highest standards of food hygiene and safety are maintained at all times.
- Liaison with shop management for re-stocking and ensuring correct amounts of preparation are made for the shop and external orders for catering.
Requirements:
In addition to the experience outlined above.
You will need to be fluent in English, both written and spoken.
All applicants must be legally entitled to work in the UK and be able to provide documentation to prove this at their interview.
You must have a UK bank account and a National Insurance number.
Hours of Work
Very flexible - ideally full time but we will discuss part time for the right candidate. The hours are great as we are only open during the day so the production kitchen operates morning - afternoon Monday to Sunday. No late nights!

Omoide takes its inspiration from the shokuji course of a traditional Japanese meal (Kaiseki-ryōri), where chirashi is served alongside pickles and dashi. Chirashi means ‘scattered’ sushi – so rather than the nigri and sushi rolls you might be used to, our freshly prepared sushi is cubed, dressed in a choice of sauces, and served on top of sushi rice (or grains) with a plentiful selection of delicious garnishes and pickles.
At Omoide, customers will be able to choose either one of our four signature house bowls, or build their own – choosing from a great selection of healthy and delicious ingredients to create their perfect bowl.
