We are a new start up kombucha brewery based in London looking for an experienced and passionate Brewer to manage all aspects of kombucha production from brewing to bottling, maintaining safe and sanitary prodecures and healthy scobies throughout the process. You will be one of a small team, working closely with the directors of the company to create consistently delicious unpasteurised kombucha.
The successful candidate will have experience in large-scale professional kombucha production with a strong understanding of microbial analysis, safe brewing and packaging, and Scoby maintenance.
Key responsibilities:

Work with the creative director to create tea-forward, sophisticated, delicious kombucha!
Help the directors build the brewery from the ground up.
Implement and follow standard operating procedures including HACCP assessments and sanitation methods.
Ensure finished kombucha is consistently delicious and safe, with particular attention to microbial analysis, Scoby health, final gravity, and pH levels.
Bottle, pack, and prepare kombucha for shipping.
Train and manage an assistant Brewer
Maintain daily hygiene and safety records.
Log wastage and assist the directors in identifying and rectifying problems that may impact output and margins.
Order ingredients and disposables and complete regular stock takes/inventory reports.
Schedule production to adequately match order volume while minimising excess stock.

You will receive training and assistance from the creative director, but the ideal candidate will be able to manage the entire brewing and packaging operation from the outset with minimal help. But the most important attribute is a passion for high-quality kombucha, and a desire to produce kombucha on par with the best Beers, wines, spirits, and other drinks. Our goal is to provide the on-trade with an irresistible low-alcohol alternative for customers that can compete not only with other kombucha brands, but with alcoholic drinks as well.
