Position: Head Pastry chef (open kitchen)
Operation: Award Winning Restaurant / Boutique Hotel
Location: Central London
Salary: £35k to £40k pa (basic / tronc package)
Working Hrs: 7 Shifts over 5 Days

approximately. 400 to 500 plus covers per day (up to 250 for dinner) and exclusive hire and private parties
Role Description
Working closely with the Executive and Head chef team – key responsibilities incl:
Menu design and development ( specifications , costings, tastings – embracing new trends and techniques)
In charge of the pastry kitchen operation with team of 6 (good stability / retention)
Daily production – all in-house: fine desserts, Petit fours, ice creams, biscuits, confectionery, sugar and chocolate work (a la Carte, private dining, afternoon tea)
Daily stock control, ordering from premium suppliers, wastage management
Hiring and pastry team development
Own Professional Development – modern techniques, kitchen management, inventory and people management

Good all round skill set with proactive / positive management style – innovative approach to menu development, creative with strong eye for detail
Salary and Benefits
Start salary: £35,000 – £40,000 pa (basic / tronc package)
Permanent full time contract subject to standard 3 months probationary period
Shift pattern: 7 Shifts over 5 Days
