Head Chef Stylish Restaurant and Bar-New Opening
Currently in the final stages of a complete refurbishment that includes a very well equipped brand new kitchen this 80-cover restaurant and bar with split level dining on 2 floors is looking for an inspirational and well organised chef to run the kitchen. Menus will be sophisticated casual fine dining Tapas style but not Spanish and will feature small dishes including Mediterranean, Modern British, Asian and Fusion items as well as Sushi and other finger foods.
As Head Chef you will be responsible and accountable for all aspects of the day to day running of your kitchen including all purchases, food production, hygiene, staff, stock and the kitchen budget. Previous experience in a high volume fresh food outlet is essential.
Pre-opening you will be required to:
• Set up the kitchen
• Create and cost menus
• Train and support staff
• Source suppliers
• Design and Implement the kitchen operating system
• Help prepare and establish company induction and training for kitchen management, quality assurance etc

• Manage the kitchen team
• Create menus to delight customers and achieve commercial targets
• Maintain very high standards of Food, Service, Hygiene, Efficiency
• Work with the Owner to achieve the business’ objectives
The Candidate
The ideal candidates will have several years’ experience as Head Chef or Senior Sous in a similar busy fresh food outlet with a sound knowledge of contemporary cuisine, up to date with modern cooking techniques. You will have a proven track-record in kitchen management including a thorough understanding of kitchen budgets and General Practitioner ’s and take pride in ensuring that your brand-new kitchen is kept immaculate. Previous experience of new openings would be an advantage.
You must be capable of working within set budgets and company financial targets and be competent operating a robust kitchen management system in line with current legislation.
Required: Qualifications / Skills / experience
• Passion and enthusiasm for food and quality
• Minimum of 5 years of experience at senior level with appropriate professional qualifications.
• Fully conversant with Hygiene and Health and Safety best practice
• Thrives on the pressure of a busy service
• Excellent kitchen manager
• Confident, professional
• Strong training skills
• Self-motivator

Starting salary: £32,000 to £35,000 + Bonus.
