The Lido Cafe - About us

We are an award winning cafe, restaurant and cocktail bar situated in the beautiful grade 2 listed surrounds of Brockwell Lido.

In our day to day guise we serve renowned brunches, and lunches with our ingredients sourced from ethical producers and a strong emphasis on seasonality. As well as this, we are a very popular events space with many private parties and weddings being held in our building throughout the year.

We serve up to 400 restaurant customers on busy days, as well as a separate takeaway kiosk serving hot drinks and BBQ items to the pool users on hot summer days. In the height of summer we employ a brigade of up to 10 in the kitchen, and all our food is made from scratch on site.

We are looking for a new head chef to help us continue achieving our success and local acclaim. You will do this by maintaining the highest standards of performance from the kitchen team in food preparation and the service of our dishes, as well as helping us to evolve our menus.

Job description
Maintaining and developing an enthusiastic kitchen brigade, sized to seasonal requirements.
Ensuring strict health and safety compliance.
Delivering excellent standards in food service across breakfast, lunch and dinner.
Ensuring financial targets set by the General Manager on Rota's and food margins are met.
Developing seasonally changing menus.
Ensuring wastage is at minimum levels.

About you
We are seeking a head chef who is experienced at running high volume, quality operations for a busy restaurant over breakfast, lunch and dinner.

We are looking for a natural leader, with great training and development skills, who is highly organised and has the ability to work well under pressure and overcome the challenges expected from a high volume site.

You might be an aspiring Senior sous chef, or a proven head chef working in a similar sized restaurant. It is essential that you understand and can deliver to financial budgets and what is required to meet General Practitioner margin targets.

We would prefer if you lived locally to us for ease of commute and for a sense of engagement to the area. Ideally no more than a 45 minute commute.

-2 Years experience of succesfully managaing or helping to lead a high volume , fresh food kitchen.
-Directing, training and motivating your team.
-Tight stock control and ordering
-Accountability for the kitchens financial performance.
-Recruiting, developing and retaining a talented team of chefs.
-Taking an interest in the whole of the business, and showing ambition.
-Strict about conforming to health and hygiene regulations.
-Knowledge of modern European and British cuisine.
-Proven ability to cater for large events and wedidngs.
-Having flexibility to work a combination of busy breakfast, brunch and lunch services.
