Full Time Assistant Manger Wanted:

Job Description –
Reporting to the General Manager for all aspects of running the site and directly supervising all front of house team.
Specifically responsible for establishing and maintaining standards of operation in the areas of:
Bar Set Up
• Ensure bar is set up for optimum efficiency when on shift and train staff to maintain long term efficiency and profitability
• Liaise with kitchen to ensure stock levels on fruit and garnishes are maintained to sufficient levels
• Consider glass wear for the week – if we are low on anything, report to General Manager before Wednesday to place order for delivery that week
Stock accountability
• Correct and thorough recording of all wastage – all alcoholic and soft drinks must always be accounted for
• Monitoring stock levels across all lines and informing manager on shift if low on any products
• Ensuring that all drinks specifications are up to date and readily available to all bar staff
• Making sure all wet products are on the till correctly with counts
Product management
• Creating a new cocktail on a monthly basis to complement the menu and keeping in line with The Leconfield as a brand
• Researching and keeping up on industry trends for new cask Ales with the aim of introducing at least two new Ales per month
• Developing relationships with brands – existing and new possibilities
Training
• Development and ongoing maintenance of ‘Bar Bible’ - consisting of all specifications , correct glass wear and garnish for each drink, correct pouring procedures and a ‘problem solving how too’ section
• Training all staff on correct pouring procedures, or ‘perfect serve’
Cleanliness and Maintenance
• Follow and implement bar cleaning procedures to a high standard
• Adhere to all company due diligence
• Ensure all bar equipment and working conditions are well maintained
Cellar maintenance
• Ensure cellar is maintained to a high standard when on shift and train the bar team so they are aware of how to maintain these standards in your absence
• Line cleaning
• Ensure cask Ales are maintained correctly following in house process and train the bar team to CAMRA / CASK Marque standards and to maintain this in your absence, liaising with manager on shift if there are any concerns
Cash ups and closing
• To perform accurate cash ups at the end of shift using till system and excel spreadsheet
• To oversee bar close, check tasks assigned in close down and direct staff if they are not correct
Performance of bar team
• Ensure all bar team reach their full potential through leading by example, on-going evaluation, training and development
• Assist GM with annual appraisals with all staff bar staff when directed to
• Ensure consistently high morale, energy, spirit and guest satisfaction
Team Work
• Working as a team with both FOH and BOH at all times and as a team with the company as a whole
Awareness of customer perception
• Act as role model for all staff
• Be aware at all times, of how customers perceive you and other staff on shift, eg; no mobile phone’s to be used behind the bar or in front of customers.
• Remember you are representing The Leconfield at all times when on site, whether on or off duty
Maintaining Communication Standards
• Immediately communicate to the staff on any changes in policy or procedure and any other directives, eg new drinks / new specifications , from the Management Team.
