Enthusiastic Sous Chef Quayside Restaurant and Pub
Following a complete refurbishment that includes a new 40 cover restaurant, bar, lounge, terrace and brand new kitchen this independent restaurant and pub located near Docklands City Airport have an immediate vacancy for a reliable and talented Sous Chef to strengthen the team and play a key role in the day to day running of the kitchen.
Menus are fresh, contemporary and seasonal and include a fine dining dinner menu, light lunches, bar meals, daily specials amongst some great pub classics with a traditional roast on Sundays. The well equipped kitchen features a Sous Vide cooker, Combi ovens etc and is a modern and comfortable working environment. The team make as much as possible in house including baking fresh bread for the A La Carte menu, standards throughout are high.
Responsibilities will include:
• Support the Head Chef to ensure that every aspect of the service runs smoothly
• Run the kitchen in the Head Chef’s absence
• Complying with all statutory regulations and legislation
• Contribute to menus and dish design
• Stock control, ordering and wastage
• Food safety and hygiene
• Support the management team to ensure targets are met.
The ideal candidate will be a solid professional all round chef with strong kitchen skills and up to date with modern cooking techniques. You will be passionate about flavours and quality with several years’ experience in a similar busy fresh food environment cooking to 2AA Rosette standard. You will have some kitchen management experience with excellent attention to hygiene and food safety
We are looking for an enthusiastic and quality driven hands on professional Sous Chef, not afraid of hard work with the experience and skill set to lead the team when left in charge.
The Head Chef comes from an impeccable fine dining background and is looking to build a brigade that can deliver the best casual fine dining venue in the area.
Interviews will include a cooking trial
5 Day week
Salary £25,000 to £28,000 relevant to experience.
