Role The Commis Waiter reports to the Chef de Rang during service and acts as a seamless connection between floor and kitchen. The Commis ensures all necessary conditions are met for the Chef de Rang to serve the table according to fine dining etiquette, whilst being responsible for an immaculate waiter station, linen and crockery, and floor at all times. They provide support and assistance as and when needed, even before it is requested, and may assist with table service. Supporting the smooth running of service, the discreet and timely performance of the Commis ensures a flawless, undisrupted unity of service for each guest. PrerequisitesA a Commis will be expected to have floor experience in high end, fine dining restaurant or hotel, and will be committed to observe and master the art of fine dining service. With a courteous yet discreet manner, the Commis will be focused, efficient and dynamic to adapt and respond to the high expectations of service delivery. The Commis will have the ambition and long term commitment to develop in a renowned establishment.
