Ahi Poke the casual all day Restaurant dedicated to serving the Hawaiian Raw Fish Dish Poke, is launching 2 wonderful Take Away Restaurants, Bloomberg in Bank and Spitalfields in Central London. This follows the successful launch of the brand’s original Restaurant in Fitzrovia and most recently the second Restaurant Ahi Poke Nova in Victoria.
An opportunity has arisen for an enthusiastic and dedicated Kitchen Manager to join our Central Kitchen Section.
Reporting to the Executive Chef on site, the appointed Kitchen Manager will be responsible for all kitchen functions, including but not limited to food purchasing, receiving, preparation and maintenance of quality standards, safety, sanitation and cleanliness. The Kitchen Manager is responsible for the training of employees in connection with purchasing, receiving, preparation and maintenance of quality standards, safety, sanitation and cleanliness.
Role and Responsibilities
• Responsible for ordering food products according to predetermined product specifications and received in correct unit count and condition and deliveries are received in accordance with the restaurant’s receiving policies and procedure.
• Controlling food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points.
• Work with the Executive Chef and General Managers in our Restaurants to plan and price menu items. Establish portion sizes and prepare standard recipe cards for all new menu items.
• Ensure that all equipment in the Central kitchen is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs by inspecting all the kitchens in our Restaurants.
• Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
• Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
• Maintain receiving logs, prepare and submit reports as requested.
• Maintain safe working environment and follow Health and Safety and Food Hygiene guidelines.
• Maintain stock levels in the Central kitchen, throughout the Kitchen sections in our Restaurants and complying with stock controlling procedures.
• To take a responsible approach towards timekeeping and attendance while on duty at all times.
What are We are looking for?
The appointed Kitchen Manager must have at least 3 years experience in a similar position in the Hospitality Restaurant or Hotel industry and have the following:
● Strong leadership skills.
● experience of Stock Controlling within a busy Kitchen Department operation.
● Work well in fast-paced setting
● Must be able to communicate clearly and effectively.
