We currently have an exciting opportunity for a Assistant Head Pastry Chef to join our Kitchen team.
We are now seeking to recruit an enthusiastic Assistant Head Pastry Chef who has the talent to deliver a 5* service at all times, having a positive and “can do” attitude. It is essential to have excellent communication skills, team work attitude and great attention to detail.
The main duties and responsibilities are:
1. To carry out all tasks as directed by the Head Pastry Chef and to assist in any other areas or duties within the kitchen/ hotel upon request
2. To manage your working hours on a weekly basis in accordance to business needs / levels.
3. To maintain good working relations with your team and all other members of staff in the kitchen.
4. To regularly spot check mise en place levels and quality for all sections within the pastry, take appropriate action where necessary.
5. To ensure accurate recipes and photo specifications for new dishes are implemented on all menus within the department. Submit recipes to Head pastry Chef for costing.
6. To ensure a quick, efficient and flexible service is provided by the team at all times.
7. To ensure the Pastry kitchen is ready for service for all meal periods.
8. To take ownership for the pastry kitchen cleanliness at all times and communicate regularly with the Back of House Manager
9. To ensure the teams uniform, appearance and personal hygiene is in accordance with hotel policy and procedure
10. To ensure personal and team compliance for the hotel fire and emergency procedures.
11. To isolate and report any faulty equipment / machinery to Engineering and ensure follow up is conducted.
12. Within the pastry kitchen, to oversee food purchases, food wastage, portion control, stock rotation and levels on a daily basis to ensure the monthly food cost budget is achieved.
13. Check if all daily deliveries have been accounted for and action is taken when needed.
14. To write the weekly Rota for the department ensuring it reflects business needs.
15. To participate in recruitment for the pastry kitchen by interviewing new candidates and supervising work trials
16. To attend 10am / 5pm briefing with the Kitchen team, Stewarding and Banqueting. Ensure key information is delivered and ensure daily business is thoroughly discussed at Pastry section briefing.
17. To ensure the team are up to date with current section activities, i.e. Menus, dishes, working practices and procedures.
18. To ensure all members of your team (including your night bakers) are achieving their daily tasks and monitor their overall performance.
19. To supervise and guide all pastry kitchen team members working practices, standards and mise en place and give feedback when required.
20. To encourage the team to submit new ideas for menus, presentations and working practices.
The ideal candidate for the Mini Bar Attendant is required the following:
• A positive and friendly attitude
• Someone who enjoys working on their own during most of the shift
• Ability to work under pressure and still deliver a friendly service
• Fluency in English
• Polite and welcoming manners
• Eligibility to work in the UK
